How To Make Cannabis Lebkuchen: A German Style Gingerbread

Make your very own cannabis infused gingerbread with our simple and easy to follow recipe. It is as warming as it is delightful!

Gingerbread is an extremely popular treat in the EU, especially around the festive seasons. Nowhere is this truer than in Germany, where lebkuchen – a German gingerbread - is cherished by all. The thing is, gingerbread can be so much more; all it takes is a little bit of cannabis. It adds another layer to this already warming spiced delicacy, perpetuating a soothing and melting buzz throughout the body and mind.

To help make this dream a reality, we have created a straightforward recipe for baking your own cannabis infused gingerbread, in the style of lebkuchen.

Note: This cannabis-infused gingerbread recipe requires cannabis-infused honey. Learn how to make it here. Each gingerbread cookie will contain roughly 6.25g of honey, so you want it to be potent enough for this to equal one dose.


(produces roughly 32 lebkuchen)


250g of plain flour

85g of unsalted butter

45g of ground almonds

40g of ground hazelnuts

200ml of cannabis-infused honey

2 teaspoons of ground ginger

1 teaspoon of cinnamon

1 teaspoon of baking powder

½ teaspoon of bicarbonate of soda

Finely grated zest of 1 lemon

A pinch of ground cloves

A pinch of ground allspice

A pinch of ground nutmeg

A pinch of ground coriander

A pinch of ground anise seeds

A pinch of ground cardamom

Icing :

100g of icing sugar

1 beaten egg white

1-2 tbsp. of water



1. Combine all of the dry ingredients in a mixing bowl.

2. put the honey and butter in a saucepan and heat over at a medium temperature until the butter is melted.

3. Pour the honey and butter into the dry ingredient mix.

4. Add the lemon zest and mix everything thoroughly. You want the dough to reach an even consistency with even ingredient spread. It should be reasonably solid by the time you are done.

5. Cover the bowl and leave it to cool.

6. While the ingredients are cooling, preheat your oven to 180°C and prepare two baking trays with non-stick baking sheets.

7. Using your hands, roll the dough into 32 evenly sized balls, roughly 3cm wide. Place these on the baking trays and flatten slightly into disc shapes with your hands.

8. Leave them for 5 minutes to expand, and then put them in the oven for 15 minutes to bake.

9. Now take them out of the oven and transfer them to a wire rack to cool.


1. Combine the icing sugar, egg white and 1-2 tbsp of water in a mixing bowl. Stir until a smooth and even consistency is reached.

2. Dip the top of each Lebkuchen into the icing, spreading with a knife. Place each cookie back onto their rack to allow the icing to set.

Once done, you should be left with 30 or so lebkuchen ready to enjoy and share with friends! Just make sure they know they have cannabis honey in them, and that it can take 45-90 minutes for cannabis edibles to take effect. Although they are traditionally a festive treat, the lebkuchen is something that can be enjoyed all year-round, so kick back and enjoy the buzz!
