Recipe: Cannabis-Infused Peanut Butter Coconut Cookies

Here's something special for you - light and fluffy cookies with an added kick. These are perfect with a cup of coffee and will make you feel like you're floating on a cloud.

Our cannabis-infused peanut butter coconut cookies are the perfect way to dose yourself with edibles. The peanut butter compliments the marijuana flavour perfectly, and the addition of desiccated coconut makes them crisp, light and fluffy.

They're so easy to make it's no problem to whip up a quick batch for guests - and they're both vegan and gluten-free, so everyone can enjoy them (unless you can’t eat nuts!).

  • Large mixing bowl

  • Wooden spoon
  • Kitchen scale
  • Baking sheet
  • Greaseproof paper
  • Rolling pin

  • 75g Dairy-free sunflower spread
  • 75g Crunchy peanut butter
  • 50g Cannabis infused coconut oil


  • 100g Soft packed Demerara sugar (or white cane sugar)
  • 250g Gluten-free plain flour
  • 75g Desiccated coconut
  • 1tsp Baking powder
  • 2tbsp Almond milk
  • Almond halves, icing sugar (for decoration)


1. First, preheat your oven to 150°C. Grease your baking sheet or line it with greaseproof paper.

2. Whisk together your sunflower spread, peanut butter and cannabis infused coconut oil in your mixing bowl. Placing your bowl in the warm oven first will help the wet ingredients to melt a little. Blend them together until you have a smooth paste.

3. Mix your dry ingredients together in a separate bowl, then combine with the paste and knead with a wooden spoon to form a soft dough.

4. Roll out your dough and use your cookie cutter to form shapes on your baking sheet. Place them in the centre of your oven at 150°C for just 15 minutes.

5. Your cookies should still be a little soft when you take them out. Place half an almond on top of each one for decoration and dust with icing sugar to preserve. As they cool, they will firm up and can be removed from the baking sheet.

It'll be had to resist eating the whole batch - but the strength can vary based on how potent your oil is, so remember to start low and go slow; cannabis edibles can take up to two hours to kick in! Good luck and have fun in the kitchen!
