

How To Make Cannabis-Infused German Gingernuts

Ginger biscuits come in all shapes and sizes, and are loved across the entire world. Nearly every country in the EU has their own variety, with each being just as popular as the next. One such variety that we find particularly special is the German pfeffernüsse. Pfeffernüsse are spiced gingernut glazed with a sweet icing. The name means “pepper nuts” and refers to both the white pepper used in the dough (giving it’s a unique taste and texture) as well as the walnut-like shape each cookie is rolled into.
Pfeffernüsse tend to be traditionally enjoyed during the Christmas holiday, but to ensure that those who love them can enjoy them all year around, we have put together an easy to follow recipe – with a cannabis twist, of course! So read on and learn how to make cannabis-infused pfeffernüsse.

INGREDIENTS
For the cookies:
2¼ cups of plain flour
½ cup of brown sugar
1/3 cup of honey
¼ cup of ground almonds
5 tbsp. of cannabutter
3 tbsp. of heavy cream (double cream)
2 teaspoons of lebkuchengewürz (ginger spice)
½ teaspoon of baking soda
¼ teaspoon of powdered white pepper
¼ teaspoon of salt
1 large egg
For the glaze:
2½ cups of icing sugar
4 tbsp. of hot water
INSTRUCTIONS
1. Using a small mixing bowl, combine your flour, white pepper, ground almonds and lebkuchengewürz. Once mixed to an even consistency, set this aside for later use.
2. In a saucepan, combine the cannabutter, cream, sugar and honey. Place on a medium heat and stir regularly until an even consistency is reached.
3. Once completely mixed, take the saucepan off the heat and allow to cool for 5 minutes.
4. Stir the flour mix into the saucepan. Once fully mixed, add in the egg and thoroughly mix again. The dough should be wet and sticky, with a glossy sheen.
5. Pour out the mix onto some plastic wrap, and wrap the dough up tightly. Place this in the fridge for 24-48 hours.
6. Take your dough out of the fridge and preheat your oven to 180°C.
7. Divide your dough in half, and make a long roll from each. Each roll should be roughly 2cm thick.
8. Cut each roll into 2cm sections, rolling each into a ball using your hands. It is important to try and do as quickly as you can while the dough is cold.
9. Place each ball of dough on a silicone cooking sheet (or equivalent) and cook in the oven for 15 minutes, or until golden brown.
10. Remove the biscuits from the oven and allow them to cool completely.
Making The Glaze
Now that we have the biscuit side of our cannabis-infused pfeffernüsse, it is time to make the sugar glaze.
1. In a mixing bowl, combine the icing sugar and water.
2. Mix until a smooth consistency is reached.
3. Dip each biscuit into the glaze, allowing excess to drip off, before placing them on a wire rack (over a tray to catch any additional drips).
4. Allow the glaze to harden on the biscuits.
Your marijuana-infused pfeffernüsse are now complete! Enjoy this traditional treat at your leisure, and let its smooth buzz melt you into relaxation! How strong each pfeffernuss will be will largely depend on how strong your cannabutter is, so don’t be afraid to experiment and find the right potency for you. They are great for sharing with friends, but remember, cannabis edibles can take 45-90 minutes to take effect – so don’t overdo it!
